Mini Coconuts???
They're actually
"Coquito Nuts"
While scouring my cookbooks for new recipes to try in class, I noticed a recipe calling for mini-coconuts!  Of course I jumped up immediately and began to research this interesting concept!

Known to most as mini coconuts,
Coquito Nuts are similar in size and shape to a marble with a surface resembling wood and interior flesh that is white.  It's taste is similar to a nutty coconut with a crunchy texture.  These nuts are shelled then they can be eaten right from the package without being washed or peeled.

These nuts are from the Chilean palm
Jubaea Chilensis that takes up to FIFTY years to start producing, but which remains productive for hundreds of years.

You can grind Coquito nuts in a food processor and use them like chopped nuts to top desserts.  Store in an airtight container in the refrigerator for 2 weeks.
