No Bake Peanut butter pie
1 (8 ounce) package cream cheese
1 1/2 cups confectioners' sugar
1 cup peanut butter
1 cup milk
1 (16 ounce) package frozen whipped topping, thawed
2 (9 inch) prepared graham cracker crusts
Directions
1 Beat together cream cheese and confectioners' sugar. Mix in peanut butter and milk. Beat until smooth. Fold in whipped topping.
2 Spoon into two 9 inch graham cracker pie shells; cover, and freeze until firm.
Makes 16 servings
Easy Chicken Casserole
4 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
32 buttery round crackers
1/4 cup chopped onion (optional)
1/4 cup chopped mushrooms (optional)
Directions
1 Preheat oven to 350 degrees F (175 degrees C)
2 Boil chicken until cooked through (no longer pink inside), about 20-30 minutes. Chop into bite size pieces and place in a 9x13 inch baking dish.
3 Combine soup, sour cream, onion (optional) and mushrooms (optional). Pour mixture over chicken and top with crumbled crackers. Cover and bake at 350 degrees F (175 degrees C) for 30 minutes (or freeze for baking at another time).
Cheeseburger Pie
� lb hamburger
1-1/2 cups milk
1/4 cup chopped onion
2 tbsp margarine
3 eggs
cheese
sliced tomatoes
salt and pepper to taste
Directions
Heat oven to 400 degrees and grease a 10 inch pie pan.
Cook hamburger with onion, drain grease.
Add salt and pepper, spread in pie plate.
Melt margarine, mix with flour, milk, and eggs (make sure mixture is smooth)
Pour onto hamburger in pie pan.
Bake 25 minutes at 400 degrees.
Remove from oven, top with sliced tomatoes, sprinkle with cheese.
Bake another five to eight minutes, until cheese is melted.
Cool five minutes before eating.
Oklahoma Swedish Meatballs
2 cups bread crumbs
1/4 cup minced onion
� lb hamburger
1 cup beef stock
1-1/2 cups milk
1 egg, beaten
salt and pepper
1 tbsp flour
cream of mushroom soup
Directions
Soak breadcrumbs in � cup milk
Add onions, meat, egg, and seasonings
Mix thoroughly (it is easiest to use your hands)
Shape into 1 inch balls
Fry in oil until lightly browned on all sides
Remove meatballs, add the flour to the fat and blend
Add beef stock, 1 cup milk, cream of mushroom soup
Cook and stir over medium heat until sauce is smooth and thickened (about 2 minutes)
Add meatballs, cover and simmer for 15 minutes
Serve meatballs and sauce over Rice Stuffing
Homemade Chocolate Ice Cream Recipe
5 egg yolks
1 pint (500ml) milk
1/2 pint (250ml) double/heavy cream
2 oz (50g) sugar
3 tablespoons of cocoa powder
Directions
Create a custard base
and at the point where you remove the saucepan from the heat to allow the mixture to cool
add the cocoa
Then chill the custard until it's really cold
Once chilled, mix until slushy
Add the cream (whipped) and make sure it mixes in well
Transfer the mixture in an ice cream maker and freeze according to the manufacturer's instructions
