Italiano-Grilled Lamb Chops

BBQ Machine-
4 thick lamb chops,
Mustard(Dijon if u prefer)
good Balsamic vinegar,
Rosemary,
Minced garlic(I luv garlic),
Good Virgin olive oil (I use Italian or Spanish),
salt and pepper to taste.
Now spread chops with little mustard, sprinkle with vinegar, seasonings and a little olive oil. Turn over and do both sides. Let set around 30 minutes. When grilling grill over high heat until done about 4 minutes each side for medium rare. Depends on how u like it.

Italiano Beef Pot Roast

1 2 1/2 pound Chuck Roast,
salt pepper and flour(regular is fine)Olive Oil(The good stuff),
2 medium onions chopped into about 1 inch pieces,1 large green pepper chopped into about 1 inch pieces,
2 medium carrots sliced into 1/2 or 3/4 pieces,
6 cloves garlic, large, peeled and slightly smashed,
1 1/2 cups dry red wine(The drinking wine),
1 tablespoon tomato paste,
1 can about 14.5 ounces tomatoes,break apart save juices,
1 bay leaf, 1 tsp. dried thyme,
1 tablespoon marjoram leaves also 1 tablespoon dried parsley leaves,
8 ounces button mushrooms,whole or chopped,
water if needed.

Now sprinkle roast with salt,pepper and little flour. Heat enough oil to cover bottom of a large pan over medium high heat,add roast brown good on both sides, add onions,peppers and carrots and saute until slightly golden.Add garlic and saute for 1 minute or so. Pour in wine, scrape all browned bits from bottom of pan. Stir in tomato paste until combined really well. add tomatoes bay leaf thyme marjoram,parsley and add salt and pepper if needed. Cover reduce heat medium low braise meat till fork tender about v1 1/2 hours.Add mushrooms then turn the meat check if water is needed..This is good with the meat noodles,rice or potatoes. Enjoy


Stuffed Swordfish-

8 thin slices of fish (no bones)
100g onion
100g peeled tomatoes
50g tuna(try a different type fish-Maybe catfish),
capers,
parsley/mint
salt and pepper,
olive oil (extra Virgin).

Chop and mix together onion, tomatoes, tuna, capers, parsley and mint. Take 4 slices of fish season and then 1/4 of the filling in the middle of each. Put the other slices on top, press firmly, sprinkle with lemon juice, put some flour over fish, and fry to golden color. Enjoy


Rice Pudding
Maltese way

1/2 cup long grain rice,
1/3 cup sugar,
1/4 tsp salt,
pinch nutmeg,
2 cups milk and 2/3 cups water,
1 tablespoon butter
1/2tsp vanilla
1/3 cups raisins.

Preheat oven to 300F,lightly grease 1 1/2 quart baking dish,mix everything except raisins,place in baking dish.Bake uncoverecd about 1 hour,stir raisins,dust top lightly with cinnamon,reduce heat about 250F bake another 30 minutes. Enjoy


Green Peppers
with Stuffed Lampuki(Fish)

You need 4 Large Peppers
25g tomato paste,
2 eggs,
300g cooked Lampuki(fish),
25g chopped olives,
salt and pepper,
150g cooked rice,
chopped parsley,
olive oil (Extra Virgin)
50 g onions
little water.

Remove top and inside of the peppers, keep the top. Heat some oil and fry the onions till golden. Add tomato paste, let water simmer for 10 minutes. Add rice, olives, parsley and your salt and pepper, and seasoning herbs u desire, flaked Lampuki(fish).Then add eggs. Continue simmering for about 10 minutes. Fill the peppers with this mixture. Replace the tops. Bake in a moderate oven for about 60-75 minutes. Serve hot or cold. Enjoy.


Dutch Apple Tart

This is good.
You need:
3/4 cup light sour cream,
1/3 teaspoon baking powder, 1 2/3 cup flour,
1/2 teaspoon salt,1/3 cup unsalted butter,
1/2 cup sugar,
1 large egg,
1 teaspoon vanilla extract,
3 nice big apples peeled and sliced
8 ounces of cheese, mild if u like, cut into wedges
2/3 cup dark sugar(light is ok),
1/2 cup finely slivered almonds.

Now mix the sour cream and baking powder,then set aside. In a separate bowl cream the butter and sugar, add egg and vanilla extract beating well until light and fluffy. Add sour cream to butter mixture. Mix well, add flour and salt, always mix well. Grease a glass or regular 9" pan spreading 1/2 of the batter in the pan. Place 3/4 of the apple and cheese wedges in a circle of top of the batter, then add remaining batter and add rest of apples and cheese to the top. Mix brown sugar and nuts and sprinkle on top. Bake at 375 for 35 minutes. Enjoy

Dutch Meatloaf

1 1/2 pounds ground meat,
1 cup bread crumbs
8 ounces tomato sauce with onions
2 Tablespoons mustard
1 tablespoon vinegar,
1/2 tablespoon salt,
1/4 tablespoon pepper
2 tablespoons brown sugar
1 egg.

Mix your meat, breadcrumbs, 1/2 tomato sauce, egg, salt and pepper. Shape into a loaf. Take rest of ingredients, pour over meat loaf, bake @ 350 degrees for around 75 minutes.

Chicken and Sweet Potato Stew
(winter is coming)

3 tablespoons flour,
12 ounces boneless skinless chicken breast halves, cut into about 1inch pieces,
1 tablespoon oil,
1 medium onion quartered and sliced thin,
1 garlic clove minced,
1 1/2 cups applec juice or cider(I prefer apple juice)
2 cups cubed peeled sweet potatoes about 1/2 inch pieces,
2 cups green beans fresh or frozen,
1 29 ounce canned tomatoes drained and chopped,
1/4 teaspoon ginger,
1 tablespoon chopped basil..
U need a large pot, dredge chicken with flour add to hot oil in frying pan, cook about 3 minutes till browned. After removing chicken from pan (do not clean pan) add onions and garlic till tender, add apple juice if pan becomes dry. Stir in beans, apple juice, sweet potatoes, tomatoes (Hope u drained the juice) basil and chicken. Bring to a boil until chicken no longer pink and potatoes are tender.

Double Dutch Pea Soup-

8 cups water,
1 bag green split peas(1lb)
1 cup chopped carrots,
1 cup onions
4 cubes chicken broth,
2 cups frozen green peas,
some good cheese(I like Gouda) shredded

In large pot bring water to boil, add dried peas, onions, carrots and chicken cubes. Reduce heat, cover and simmer, stirring every so often. Mash half the peas against the side of the pot with a wooden spoon to thicken the soup. Stir in frozen peas cook around 5-8 minutes. Serve with the cheese. (Good for winter coming up)

SweetHeart Cake

500 grams flour,
1tsp baking powder,
400 grams brown sugar,
1 tsp clove,
nutmeg,
1/2 tsp ginger,
1 tsp cocoa,
1 tsp salt
2 tsp cinnamon,
500 ml milk,
120 grams candied peel(variety)
30 grams candied cherries,50 grams raisins,
2 1/4 cup Brandy.

Now combine flour and baking powder in a big bowl, mix in the salt, brown sugar and milk, cloves, nutmeg and ginger and cocoa. Knead into workable dough. Put 2 tablespoons candied peel, one tablespoon raisins and cherries to side, mix rest. Put dough into a pan, form into a heart, bake at 340F for about 90 minutes and let it cool down. Then coat rest of top with a glaze made with the Brandy, sugar and water. Brush on cake, finish with left over peel, raisins and cherries


Dutch Sugar Hail Cookies

10 1/2oz flour,
6oz butter,
5oz sugar,
2tbsp cinnamon,
1/2 tsp salt,
2 egg whites.

Mixed softened butter with sugar, cinnamon, salt and the white of 1 egg, till creamy. Sift flour on a board, put mixture in small dabs all over flour. Knead into small ball and let dough cool in fridge for 45 min. Grease cookie sheet, put dough on it rolling out into thin layer. Brush with remaining egg white You can sprinkle some very fine nuts on it. Cut but do not separate in strips about 1 1/2 inch wide and 3 1/2 inch long. Bake at 300F for 20 minutes, cool then break them at precut lines into individual cookies.


Czech Cookies

1 Cup butter
1 cup sugar
2 egg yolks
1 tsp vanilla,
1/8 tsp good brandy,
2 cups flour,
2 cups pecans (any nuts will do) chopped,
1/2 cup strawberry Jam,
1/4tsp allspice.

Cream butter until soft, add sugar gradually beating till light and fluffy, add egg yolks, vanilla and brandy, sifted flour and all spice. Stir in chopped nuts. Spoon half of dough into a greased 8inch square cake pan spreading evenly. Top with Strawberry Jam (u can use another flavor if desired). Cover with remaining dough. Bake @ 325F at 1 hour or until lightly brown. Cool and cut into 1 1/12 squares.

Dutch Ovenbaked Apples

12 tart red apples,
2 cups brown sugar,
1/2 cup seedless raisins,
2 tbl grated orange peel,
1/2 cup soft margaine,
2 cups very hot water,
12 tbl orange juice (concentrate)

Wash, core, and stem but do not peel the apples. Stand them in bottom of a foiled lined pan. Stuff with 1 cup brown sugar, raisins, and orange peel equally. Fill with margaine and sprinkle with remaining sugar, over the tops. Pour hot water in pan, spoon 1 tbs juice over top of each apple. Cover with foil, bake at 325F for 2-3 hrs. Check with fork to c if apples are tender. Enjoy.


Austrian Butter Cookie

1 cup flour,
1/2 cup butter softened,
2/3 cup nuts chopped,
1 cup sugar

Sift flour and sugar together, add nuts, blend in with the butter,stir with spoon till a soft dough is formed. Roll dough on a floured board, 1/8inch thick, cut into rounds with biscuit cutter, place on ungreased cookie sheet. Bake @ 375F for 7-10min. You can make a sandwich cookie. Take 1 cookie put jam of ur choice, place another cookie on top. There u go.Grab the milk


Hungarian Salad

4 green peppers,
4 small tomatoes,
4 small cucumbers,
1 onion,
6 oz. good cheese grated,
1 bunch parsley chopped,
12 ounces Virgin Olive Oil,
1 tablespoon dry white wine (drinking type)
salt.

Cut veggies into thin slices, in a bowl mix with salt. Then make a dressing with the wine, oil and cheese. Pour over veggies referigerate for 1 hr serve with the parsley.


German Chocolate Cake
(from Kelin, Germany)

1/4lb sweet chocolate,
2 cups sugar,
1/2 cup walnuts and pecans chopped,
1 cup shortening,
4 egg yolks,
1/2 cup boiling water,
1 cup buttermilk,
1 tsp baking soda,
2 1/2 cups flour,
1 tsp vanilla,
1/8 tsp salt
4 egg whites beaten stiff,
1/8 cup brandy or cognac.

Now in a bowl cream together sugar, shortening. Add egg yolks, blend well. Melt chocolate in 1/2 cup boiling water, blend with mixture. In a bowl add buttermilk, flour, salt and baking soda, add vanilla after mixing thoroughly. Fold in egg whites, fold in nuts. Add brandy or cognac. Pour into three 9- inch baking pans. Bake @ 350F until fork thin.

Icing
1 cup sugar,
1 stick butter
1 C milk (evaporated if u have it)
3 egg yolks, beaten
1 cup shredded coconut
1 cup pecans (any nuts), chopped,
1 tsp vanilla.

In a double boiler stirring add milk sugar, butter and egg yolks. Cook till it thickens, add coconut, pecans and vanilla, then spread over cake and enjoy.


Austrian Goulash

3 lb onions, sliced
1/2 cup shortening
2 Tbs paprika,
1 clove garlic,
2 tsp caraway seeds,
1 Tbs marjoram,
1 tsp salt,
1 Tbs lemon juice,
3 lbs beef cubed,
1/2 cup cold water,
1 Tbs flour,
2 tsp tomato paste.

now-Saute onions in shortening, add 1 tblspoon paprika, and all the garlic, caraway seeds, marjoram, salt and lemon juice. Add meat and simmer covered for 2 hours. Skim off fat. Add in remaining paprika, flour, water and tomato paste, simmer till meat is tender, about 15 min. Serve with rice, potatoes or noodles.


Liver-Chicken or Beef

1lb liver,
flour (for coating)
olive oil (Good oil),
salt
pepper
oregano
lemon juice

Wash liver very well, cut into small strips. Season with salt and pepper, coat with flour. Fry in the olive oil on medium heat. Remove, season with oregano. Pour lemon juice over the liver.
