Oldsalt¹sInfamous Salad Dressing Combine equal parts light vegetable oil (safflower, canola, etc) and pinapple vinegar. Add half as much grenadine syrup and lemon juice. Add dill, thyme, chives, salt, black pepper, dried onion flakes, garlic powder, and/or other herbs and spices to taste. Can also add various fruit purees for a sweeter taste. Mix these ingredients in a microwaveable container and heat at 70% power for 15 to 20 sec. (the mixture should not get too hot to hold in the hand). Stir, pour into cruet and allow to stand at least one hour. This can also be converted to a good dipping sauce by thickening with arrowroot or cornstarch. My favorite green salad to use this with is fresh watercress, butter lettuce, and baby spinach with chopped leek, grated carrot, diced radish, pine nuts (unsalted), mandrin orange slices, and either grape tomatoes or sun-dried tomatoes and a sprinkling of grated coconut. |
Cranberry Raspberry RelishIngredients: 12 ounces cranberries 1 C fresh or frozen raspberries 1 cup honey 1/2 cup chopped pine nuts Directions: In a food processor or blender, combine the cranberries, raspberries, pine nuts, and honey. Blend until evenly chopped. Refrigerate for several hours to allow flavors to blend. Servings: 10 |
Sweet n Sour Salad DressingIngredients: 1/2 cup Safflower oil 1/4 cup Grenadine syrup 1/4 cup Lemon or Lime Juice 2 tsp Dried minced onion 1/2 tsp lemon peel 1/2 tsp dried parsley 1/2 tsp black pepper 1/2 tsp salt Directions: Mix all ingredients, and chill before using. |
