Apple Cake(for viva) 1 cup safflower oil 4 eggs 2 cups honey 2 teaspoons ground cinnamon 1/2 teaspoon salt 1 teaspoon vanilla extract 1/2 cup all-purpose flour 1 cup oat flour 1/2 cup corn flour 1 teaspoon baking soda 4 cups dried apples (diced) Preheat oven to 350 degrees F. Grease and flour one 9x13 inch cake pan. In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well. Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan. Bake at 350 degrees F for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting. Yields 1 -9x13 inch cake. |
Cider Spice Cake(for Toshe) 1/2 cup butter or margarine, softened 1 cup brown sugar 2 eggs, beaten 1 cup all-purpose flour 1/2 cup whole wheat flour 1 teaspoon baking powder 1 teaspoon ground cloves 1 teaspoon ground cinnamon 1 teaspoon ground allspice 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1 cup hard cider Preheat oven to 375 degrees F Sift flour, baking powder, sugar, spices, and salt. Mix well and set aside. In a large bowl, cream the butter; then add the eggs. Begin whipping eggs and butter. Add cider slowly. Whip until the mixture will peak and stay up. Pour into a 9x5 inch loaf pan. Bake for one hour, or until a knife stuck into the cake comes out clean. |
BrowniesIngredients: 1/2 Cup Butter 2 Eggs 1 Cup Sugar 1 Cup Flour 1/2 Cup Nuts 4 Tablespoon Cocoa 2 sticks sweet dark chocolate 1 Teaspoon Vanilla 1 Pinch Salt Directions: Cream butter, chocolate and sugar. Mix flour and cocoa together. Add all ingredients and bake at 350 degrees for 25 minutes. VARIATION: Black-Forest Brownies 1 can cherry pie filling 1 container Cool Whip TM Bake brownies according to instructions. Cool. Spread cherry pie filling on top. Then top with Cool Whip TM. Refrigerate. |
Dad's FudgeIngredients: 4 l/2 cups Sugar 1 Ige Can evaporated milk 12 T Butter l/2 cup Hershey's Cocoa 18 oz Chocolate chips l/2 cup chopped nuts 3 T Vanilla Dash salt Directions: Cook sugar and canned milk to rolling boil for 6 minutes; Stirring constantly. Use large stainless steel pot; remove from heat. Add butter, cocoa, chocolate chips, nuts, vanilla, and salt Stir until mixed. Pour into buttered pan. Let stand 6 hours before cutting. Will keep a long time in cookie tin or a sealed container in a cool place. |
Fudge PieIngredients: 1 C White Sugar 1/4 C Flour 2 Eggs, beaten 3 Tbs Cocoa 1 stick sweet dark chocolate 1 Stick Margarine Directions: Mix together. Grease pie plate and cook 30 minutes at 350 degrees Alternative: This also makes great Fudge Bars, which I top with a layer of Butter Creme (White Chocolate) and roasted slivered Almonds. |
