John's MuffinsIngredients:1/4 Ib Baker's Chocolate 1/2 cup Equal sweetener or sugar 2 Tbs Butter 1/2 cup raisins 1/2 cup chopped nuts 4 cups flour 2 eggs 3 cups ricotta cheese Directions: Mix ingredients together. Place in greased muffin tin. Bake at 275 until centers are firm. MONTESSORI MUFFINSIngredients:2 cups whole wheat flour 2 teaspoonns baking powder 1/2 teaspoon lite salt 1 cup chopped pitted prunes 1 egg (egg substitute), beaten 1/4 cup canola oil 1/2 cup molasses 1 1/2 cups skim milk Directions Preheat oven to 400. Combine flour, baking powder, salt, and prunes in a bowl. In another bowl, stir together egg, oil, molasses, and milk. Combine mixtures, mixing just until blended. Spoon into greased 12 cup muffin tin. Bake 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Adie's Cajun Biscuits Ingredients: 2 1/2 cups Bisquick 1 tsp Mustard powder 3/4 tsp cracked pepper corns 1/2 tsp cayenne pepper powder 1/2 tsp garlic powder 2 cups Milk Directions: Preheat oven to 450. Combine dry ingredients. Stir in milk until dough forms. Turn onto work surface (drop spoonfuls onto ungreased baking sheet]. Bake 8 to 10 minutes until brown. Recipe courtesy of Adeline Dibert. |
