Noodles a la RogersIngredients:1 pkg egg noodles (cooked) 2 cups sour cream 1 cup grated parmesan and/or romano cheese 8 oz sliced black olives 1 Irg tomato, diced 1/2 cup fresh parsley, chopped 1 bunch fresh green onions finely chopped 1/4 cup fresh dill, chopped to taste salt to taste pepper Directions: Mix sour cream, cheese, vegetables, and seasonings in bowl. Let stand at least 2 hours. Prepare noodles. Combine noodles and sauce. Toss. Microwave 6 minutes on medium or prepare in sauce pan on stove until thoroughly warmed. Macaroni And Cheese DeluxeIngredients:1 pkg. Kraft Macaroni and Cheese 4 cups water 1 pkg. Shredded Sharp Cheddar 4 Roma Tomatoes (sliced medium) 1 can (2.25 oz) sliced Ripe Olives 1 can (3 oz) sliced Mushrooms in butter sauce 1 pkg (10 oz) frozen green peas 1/2 chopped red onion 1 tbs dried parsley 1/2 tsp dried minced garlic 1/2 tsp sweet basil 1 tsp salt Instructions: Bring 4 cups water to boil in sauce pan with salt, basil, parsley and garlic. When water reaches full boil, add Macaroni. Cook on med high ~8 minutes then add peas, mushrooms, olives, tomatoes, and onion. < br > At 10 minutes add Cheddar and Cheese packet from Kraft package. Stir until Cheese melts and ingredients are thoroughly mixed. MINCED CREAMED VEALIngredients:1/2# Veal Cutlet 2 tbs butter 6 minced fresh button mushrooms 4 minced fresh leeks 1 cup heavy cream 1/2 tsp tarragon 1 tsp arrowroot or cornstarch (thickener) salt & fresh ground pepper Instruction: Brown veal cutlet until throughly cooked (when slice in 1/2" strips). Melt butter in skillet and add mushrooms and leeks. Cook slowly for 5 minutes. Add veal and cream and thickener. Salt and pepper to taste, add tarragon. Cook over medium heat, stirring often, for about 5 minutes, until the cream has reduced and thickened. Serve over rice, toast, or pasta. Cajun Pork RibsMix the following dry ingredients in a bowl:2 Tbs Hungarian paprika (regular if you don't have it) 2 tsp garlic powder 2 tsp onion powder 1/2 to 1 tsp cayenne pepper 2 tsp fresh ground black pepper 1 tsp salt 1 tsp thyme (dried) 1 tsp oregano (dried) Directions: Mix the ingredients thoroughly and set aside. After trimming the ribs of extra fat, rinse and dry with paper towels. Using a pastry brush, spread a light coating of yellow mustard on both sides of the ribs (this sets up a nice moist crust on the ribs). Next, sprinkle the dry ingredients above lightly on both sides of the ribs. Cook the ribs in indirect heat (Not Grilling). This means placing the fire on one side of the pit and the ribs on the other. Cook for 4 to 6 hours at 225 degrees or until the meat is tender. One way to tell this is that the meat will have pulled back from the ends of the bones and the bones will be blackened Crockpot Chicken StewIngredients12 Fresh Boneless, Skinless Chicken Thighs 1 can (14 1/2-oz) diced tomatoes with Mrs. Dash herbs 2 cups cubed zucchini squash 1 cup fresh pearl onions, peeled 1 cup fresh baby carrots 2 tablespoons tomato paste 2 cloves garlic, peeled and minced 1 tablespoon sugar 1/2 teaspoon crushed red pepper flakes 1/2 teaspoon celery flakes 1/2 teaspoon salt 4 baked potatoes (or 8 oz. pasta) Directions Rinse chicken with cold water and pat dry with paper towels. Cut chicken into 1-inch pieces. Combine all ingredients in large crockpot; mix well. Cook on low setting at least 6 hours. (Insert an instant-read thermometer into the thickest part of the chicken. Internal temperature should read 180 degrees F). Serve over baked potatoes or hot cooked pasta Tip: Refrigerate leftovers immediately. Bacon Tomato CapelliniIngredients:8 strips sliced bacon, cut up 4 Tbs sliced green onion 2 clove garlic, minced 4 medium tomatoes, peeled and chopped 1 tsp crushed basil leaves 1 tsp thyme, dried 1 tsp sage, dried 1 pinch saffron (optional) 1/2 tsp salt 1/4 tsp ground black pepper 6 oz capellini, uncooked Directions: In a large skillet, cook bacon until crisp. Drain; reserving 1/4 cup drippings; return to skillet. Add bacon, green onion and garlic; cook 1 minute. Stir in tomatoes, spices, salt and pepper. Simmer 5 minutes. Prepare capellini according to package directions; drain. Add to tomato mixture; toss to mix. CHILE RELLENO TORTAIngredients:1 pound of low-fat skim milk cheese (provelone, farmers, munster, etc), grated 5 eggs (or egg substitute) 1/3 cup all purpose flour 1 2/3 cups ricotta cheese 14 oz. can diced green chiles, drained 1/4 cup picante sauce Directions: Preheat oven to 375, Mix grated cheeses and spread evenly in buttered (Pam) 10 inch pie plate. Beat eggs, add flour slowly, then beat in ricotta. Pour egg mixture over cheeses in pie plate. Carefully spoon chiles over surface to get even coverage, then pour picante sauce over all. Bake 45 minutes or until center is set. Makes 8 to 10 servings. The Quarter Cup DishFruitsDried Cranberries 1/4 cup Dried Apricots 1/4 cup Mandarin Oranges (drained) 1/4 cup Crushed Pineapple (drained) 1/4 cup Vegetables Carrots 1/4 cup Jicama 1/4 cup Shallots (green onions) 1/4 cup Parsley 1/4 cup Chop the above (except the pineapple) very fine. Bring 1/3 cup water and 1/3 cup honey to a low boil. Add fruit and vegetables cook over low heat until the liquid is mostly gone (carrots and jicama should still be crunchy). While fruits and vetetables are cooking mix 1/4 cup wine vinegar with 1/4 cup safflower or sunflower oil. (canola oil also works)and the following herbs and spices. salt 1/4 tsp black pepper 1/4 tsp cinnamon 1/4 tsp garlic powder 1/8 tsp marjoram 1/4 tsp thyme 1/4 tsp clove 1/8 tsp chili powder 1/8 tsp sweet basil 1/8 tsp Heat dressing in microwave about 40 seconds (judgement call since microwave heating is variable). Dressing should be warm when served. Serve over broken ladyfingers or cake doughnuts or white rice. Garnish if desired with whipped cream a fresh strawberry and a mint sprig. Makes 8 servings JR's Prize Winning ChiliBring 1 gal. of water to a slow boil.Add: 1/2 cup Pinto Beans (dried) 1/2 cup Kidney Beans 1 Cup Tomatoes (quartered) 1/2 Lb hamburger (optional) 1/4 Lb peppered sausage links chopped into bite-size (optional) *3 jalepenos (diced) 3 poblanos (diced) 1 demre pepper (diced) *5 Tabasco peppers (diced) 5 serrano peppers (diced) 5 Mexican negro peppers (diced) 10 anaheim peppers (diced) 2 cloves crushed garlic 1/2 cup chopped onions 1/2 TBS salt *1/4 tsp cayenne pepper (ground) Simmer together over the open fire until thickened (usually 2- 4 hours). five minutes before serving add 2 quarts of Tecate dark beer. Notes: All peppers are fresh, if dried peppers are used reduce amounts in 6 to 1 ratio. For milder chili omit the ingredients preceded by an asterisk and substitute 2 or 3 additional poblano or anaheim peppers. Christmas Sausage PieIngredients:1 Lb Ground pork sausage 1/2 Lb Beef sausage links, cut into equal size pieces 8 oz. can Pineapple chunks or chunky applesauce 1 cup raisins or dried currants 1 tsp pepper 1 tsp salt soda cracker crumbs 1 cup corn meal 1 cup flour 2 tbsp olive oil 1 cup lard or shortening Directions: Mix cornmeal, flour, olive oil, and lard into dough. Line a 10" pie plate. Mix sausage, pineapple, raisins, salt, and pepper. Brown sausage mixture until sausage is cooked. Fill pie plate with sausage mixture, cover with cracker crumbs, and bake at 325 until done. Captured OmletIngredients:6 eggs 2 tbsp olive oil 6 each scallions with l-inch green part, finely chopped 5 celery stalks (tender center stalks) finely chopped 1 tbsp Tomato paste 1/2 cup sun-dried tomatoes 1 cup short-grain white rice 1 cup farina (cream of wheat) 1/2 cup grated cheese to taste salt to taste pepper Directions: In a 3-quart saucepan, heat olive oil over medium heat. Add scallions, celery, and sun-dried tomatoes stir until scallions and celery are soft and translucent, about 5 minutes. Add rice and stir until the grains are well coated with oil, about 1 minute, and allow it to come to a boil. Add the farina slowly to the rice adjust the heat to keep mixture at a slow bubble. When the farina is cooked add sun-dried tomatoes, scallions, celery, salt, and pepper. When these ingredients are thoroughly mixed, pour the mixture into a 6 or 8 inch baking dish. Then, using a 1/2 cup measure press six evenly spaced holes into the mixture and break an egg into each. Cover lightly with grated cheese and bake at 200 for 3.5 minutes. Garnish with fresh herbs and tomato slices (bacon?) and serve. Servings: 6 |
