GARAM MASALA
There are many different versions of garam masala & you can easily buy it at an international- type food store. But if you can't find it, here are a few recipes to try...
Basic Garam Masala
    2 tbsp cummin seeds
     4 tbsp coriander seeds
     1 tbsp whole black peppercorns
     4 cinnamom sticks
     1 tsp whole cloves
     1 whole nutmeg (finely grated)
     3 bayleaves
     2 tsp cardomom seeds (measure after removing seeds
     from pods after roasting)
  
- Roast coriander, cardamom, cummin, peppercorns,
  cinnamon, & cloves separately, in a small pan, until
  each one smells strongly, then put them aside to cool.
- Seed the cardomom pods, then put the seeds & all of the
  spices, except the nutmeg, into a blender and grind them
  into a fine powder.
- Add nutmeg to blender, & mix well.
- Store in an airtight container.
Fragrant Garam Masala
    2 tsp cardamom seeds (measure same way as above)
     1 tsp whole cloves
     1 tsp mace blades (substitute with 1/2 finely grated
     nutmeg if preferred)


- Roast each separately, except nutmeg, then grind them,
  add nutmeg, & mix well.
- Store in an airtight container.
