Low-Fat Bean Soup
This recipe makes a bean soup that is very similar to the soup served at Bob Evan's Resturaunt. My family loves it and it's very easy to make since you just combine everything in the crock-pot.
Ingredients
- 5 cups water
- 3 cups chopped onion
- 2 cups diced cooked ham
- 1 cup diced carrot
- 1 tsp. dried rosemary
- 3/4 tsp. rubbed sage
- 1/4 tsp. pepper
- 1lb. dried navy beans
- 1 can (14 oz.) fat-free chicken broth
- 2 cloves garlic, minced
- 1 bay leaf
Combine all ingredients in an electric slow cooker. Cover with lid, and cook on high-heat setting for 3 hours or until beans are tender. Discard bay leaf.
