Microwave Fudge

1 � cups semi-sweet chocolate chips
� cup sweetened condensed milk
Dash salt
� teaspoon vanilla
� cup nuts, optional

In microwave safe bowl, melt the chips. These will not change shape until
stirred, so watch and check often. It should take 1-2 minutes. When
melted, stir in the sweetened condensed milk and salt. Microwave on high
until heated through - about 45 seconds. Stir in the vanilla. Add nuts if
desired. Pour into buttered container or spread evenly onto waxed paper or
foil. Top with nuts for decoration.
Chill at least 2 hours before cutting into squares. Store covered in the refrigerator.
Makes about 1 pound.

Microwave Peanut Brittle
1 cup sugar
� cup white corn syrup
1 cup raw peanuts
� teaspoon salt
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

In 2 quart microwave safe bowl, stir together, sugar, syrup and peanuts.
Microwave on HIGH for 4 minutes. Stir in salt. Microwave on High for 3
minutes or until light brown. Add butter and vanilla, blending well.
Microwave 1 minute more. Stir in baking soda until light and foamy. Turn
onto well-buttered cookie sheet. Pull to stretch thin while it is still hot,
being careful not to burn your fingers. Tongs work well for this. Cool and
break into pieces to serve.

These times are for 1000 power microwave - add time for less power, but watch
