Hash Brown Casserole

1 (2 pound) bag frozen hash browns
1 medium onion, finely chopped
3 tablespoons margarine, room temperature
1 cup sour cream
8 ounces Cheddar or Colby cheese, shredded
1 can cream of chicken or cream of mushroom soup
� teaspoon salt
� teaspoon pepper

Combine onion, sour cream, cheese, cream of chicken/mushroom soup, butter, and salt and pepper together, mixing well.  Add frozen hash browns a few cups at a time covering with mixture until all are covered.  Pour into a 13 x 9 casserole dish.  Bake at 350 degrees for 45 to 50 minutes or until bubbly and slightly browned.

For an optional crisp topping you can add crushed cornflakes mixed with melted butter to the top of the casserole before baking.  It will add a hearty crunch to the dish.
