Fresh Cherry Pie

1� cup sugar
2� tbls quick cooking tapioca
� tsp salt
� tsp almond extract
4 cups pitted cherries
2 tbls butter, or margarine
1 unbaked pie crust (if homemade, prepare with almond extract)

Combine sugar, tapioca, and salt.  Add almond extract with cherries and toss with sugar mixture.  Pour into pastry lined 9" pie pan.  Adjust top, flute edges or crisscross.  Bake in 425 degree oven 40 minutes.  Cover edges with foil to avoid over browning.
