Flaky Pie Dough

3 cups all-purpose flour
1/8 tsp salt
1 egg
6 tbls ice water
� cup plus 2 tbls cold, unsalted butter

Beat egg and ice water together.  Set aside. Add flour and salt together, mix.  Add butter to flour mixture and rub together with fingertips until pieces are the size of peas.  Add the egg mixture.  Toss gently until the mixture just comes together - DO NOT OVERWORK THE DOUGH.  Divide the dough in half and form into two disks.  Wrap each in plastic and chill in refrigerator for at least 1 hour.
