| Chocolate Chip Oatmeal Cookies
1-3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1-1/4 cups packed light brown sugar 1/2 cup granulated sugar 1/2 cup (1 stick) butter, softened 1/2 cup unsweetened applesauce 2 egg whites 1 tablespoon vanilla extract 2-1/2 cups quick-cooking or old-fashioned rolled oats 1/2 cup mini semisweet chocolate chips 1. Preheat the oven to 375�F. Coat baking sheets with nonstick cooking spray. 2. In a small bowl, combine the flour, baking soda, and salt; set aside. 3. In a large bowl, beat the brown and granulated sugars, the butter and applesauce until smooth; beat in the egg whites and vanilla. 4. Gradually beat in the flour mixture until smooth; with a spoon, stir in the oats and chocolate chips. Drop by rounded teaspoonfuls 2 to 3 inches apart on the cookie sheets. 5. Bake for 9 to 11 minutes, or until golden; cool on pans for 2 minutes then remove to a wire rack to cool completely. Makes about 4 dozen cookies |
