It is February...a great month for one of my favorite recipes...a chocolate cheesecake with a hint of expresso flavor. This always disappears fast!
| 26 chocolate wafer cookies (crushed) | 2 TBSP expresso coffee ground VERY fine |
| 2 TBSP sugar | 1/4 C melted butter |
Blend above ingredients and pat on bottom of 9" springform pan. | |
| 24 oz. cream cheese, softened | 3/4 C sugar |
| 1 C whipping cream | 3 eggs |
| 1/3 C very strong coffee | 3 TBSP flour |
| 2 egg yolks | 12 oz. semi sweet chocolate chips, melted |
Preheat oven to 350 degrees. Beat cream cheese till smooth. Add sugar and beat till creamy. Sprinkle flour on top and blend completely. Add eggs and yolks, one at a time, beating well after each addition. On low speed, beat in chocolate, coffee and whipping cream. Pour over crust. Bake for 1 hour. Turn off the oven. Do NOT open oven door. Let sit in oven for 40 min. Remove and cool to room temperature. Refrigerate. | |
