Hello, I am a Information Systems instructor at Central Carolina Community College. I am also a student working towards a Master's degree in Information Systems - Network Management. When I am not in class, I enjoy cooking and quilting.

It is February...a great month for one of my favorite recipes...a chocolate cheesecake with a hint of expresso flavor. This always disappears fast!

Expresso Chocolate Cheesecake

Crust
26 chocolate wafer cookies (crushed)2 TBSP expresso coffee ground VERY fine
2 TBSP sugar1/4 C melted butter

Blend above ingredients and pat on bottom of 9" springform pan.

Filling
24 oz. cream cheese, softened3/4 C sugar
1 C whipping cream3 eggs
1/3 C very strong coffee3 TBSP flour
2 egg yolks12 oz. semi sweet chocolate chips, melted

Preheat oven to 350 degrees. Beat cream cheese till smooth. Add sugar and beat till creamy. Sprinkle flour on top and blend completely. Add eggs and yolks, one at a time, beating well after each addition. On low speed, beat in chocolate, coffee and whipping cream. Pour over crust. Bake for 1 hour. Turn off the oven. Do NOT open oven door. Let sit in oven for 40 min. Remove and cool to room temperature. Refrigerate.
