Brief report:
Nice day for a quick hike. You begin at the Colby Canyon trailhead. After a few miles, you'll reach Josephine Saddle. Turn right (east) at the saddle and follow the west ridge of Strawberry Peak. Just before the summit you'll need to surmount an 80-foot section of class 3 rock (this is the highlight of the climb). You can descend the same way you came up or go down the trail to Red Box.
