Oyster patties are a must with my husbands family
for the holidays. This recipe is my mother-in-laws.
I've done my best for the last fifteen years to
make them like she did. I think I've come close
because they drive in on the holidays.



Oyster Patties/with oysters


24 medium patty shells
1 large onion chopped fine
3 ribs of celery chopped fine
1 stick of butter
1 can mushroom soup
1 cup oyster water
2 rolls garlic cheese
4 dozen small oysters
dash of hot sauce
Preheat oven to 350�F.

Take the caps off patty shells. Drain
oysters and save one cup of water. If
you are unable to buy small oyters you
can cut large oysters in half. In large
pot saute onions and celery in block of
butter until transparent. Add the rest
of the ingredients and cook on low heat
until oysters start to curl. Fill patty
shells with mixture and replace tops.
Place patty shells on cookie sheet and
bake for about 30 minutes at 350�F. Serve
hot topped with turkey gravy.


Mock Oyster Patties/with Broccoli

If you do not eat oysters you can substitute
"Broccoli" for the oysters. I have done this
more than once when I was unable to get fresh
oysters. There is very little difference in
the taste.



Oyster dressing and oyster soup are two other
dishes that we have for our holiday dinners.
