Baked Brie with Onion


1 pound brie

2 Valdalia onions, sliced thin 3 tablespoons olive oil

3 tablespoons butter

Slowly saute onions in butter/oil over low heat until caramelized (30-45 minutes). Drain and blot with paper towels. Plane top crust off brie with cheese plane and place in souffle dish to fit. Top with onions. Bake 15-20 minutes in 350 degree oven. Let rest for 10 minutes. Serve with Bremer wafers.

For a 1 kilo brie, use three onions and four tablespoons each of oil and butter.
