| Turkey Balls 1 lb ground turkey 1 1/4 - 1 1/2 cups of bread crumbs 3 eggs 1 tablespoon garlic powders / minced / fresh 2 teaspoon of salt pepper (optional) mix all contents with hands in a bowl. role up balls about 1 1/4 in high. cook at 400 for about 20 minutes or till done. Mix in with favorite spagehti sauce. Spagehti (our family style) 3-5 blanched tomatoes ( tomatoes pealed by placing in boiling water about 90 seconds . 1 can of tomatoes paste ( italian flavored recomended but plain is fine) 1 can of tomatoe sauce 1 lb hamburger meat 3 cloves minced garlic 1 whole onion chopped 1 1/2 tablespoon dried veggie flakes (optional) brown meat with onion and a few dashes of garlic powder and season or regular salt. add tomatoe sauce , garlic then tomatoe paste. mix well and make sure tomatoe paste mixes well, stir in a cup or 2 of water. When all is tender add the blanced tomatoes by putting one in your hand and making a tight fist . Smash all of them in there . Let cook 10 minutes or till thick ness is desired. great noodles come from timing and tuness. for best results wait to put noodles in when the water is boiling rapidly and when noodles are tender to your liking add a cup or 2 of ice water before straining this prevents over cooking. |
| Carne Asada 4 lbs beef flap or skirt meat tenderized ( done by butcher) 1 large orange 2 large limes carne asada seasoning 5 ratishs 1 chopped onion 3 minced cloves of garlic 2 fresh jalapenos coat each steak generously with the seasoning . stack steaks in a bowl and sweeze the juice out of the limes and oranges on stack. put ratishes onions jalapenos and garlic on top and fold steaks together over just one time. marinade at least 30 mins. cook to likings on BBQ. |
| Double-Decker Confetti Brownies 3/4 cup (1 1/2 sticks) butter or margarine softened. 1 cup granulated sugar 1 cup firmly packed light brown sugar 3 large eggs 1 teaspoon vanila extract 2 1/2 cups all purpose flour, divided 2 1/2 teaspoon baking powder 1/2 teaspoon salt 1/3 cup unsweetened cocoa powder 1 tablespoon butter or margarine melted 1 cup M&M's semi sweet chocolate Mini baking bits, divided makes about 24 bownies Pre heat over to 350 degrees. Lightly grease 13x9x2 inch (or something close to that) baking pan; set aside. In large bowl, cream 3/4 cup butter and sugars until light and fuggy beat in eggs and vanilla . In medium bowl, combine 2 1/4 cups flour, baking powder and salt blend into creamed mixture. Divide batter in half. Blend together cocoa powder and melted butter; stir in one half of dough. Spread cocoa dough evenly into prepared baking pan. Stir in remaining 1/4 cup of flour and 1/2 cup of M&M's baking bits into remaining dough; spread evenly over cocoa dough. Sprinkle with remaining M&M's baking bits. Bake 25 - 30 minutes or until edges start to pull away from sides of pan. Cool completly . Cut and serve. |
