Automatically upload files to server on save is necessary if you find yourself forgetting to check things back in when you're done working on them. It slows down saving, and closing files, because there's an FTP process involved, but at least your collaborators won't be left in the lurch.

Check out Files when Opening is the reverse. This forces you to check out files every time you want to do anything with them. This can be a little tedious if you just want to see something, and you already have a local copy. If you leave this option unselected you'll be asked what you want to do for every file. By the way, if you have a local copy, Dreamweaver doesn't download another unless it detects there's been a change. It just puts the check out slip on the server.
Check Out Name can be anything you like, as long as it makes sense to your collaborators.

Email Address is here to facilitate communication with your collaborators. You can quickly email the dufus who forgot to check the file back in before he/she/it went home Friday night.
