Leave it to the Cajun people to develop another fun and unique way to cook outdoors. This is how the Cajun Microwave Oven came about. It is a wooden charcoal-heated box used for cooking meats outdoors. They are made from thick, treated deck boards and the inside of the box is lined with 26 gauge metal. The top is made with heavy gauge angle iron for years of trouble free use. The woodfire and charcoal mix radiates heat through the box and cooks the meat inside.
How do you cook in it?
First you season and marinate the meat ,(overnite is best.) Put it in a pan with onions, carrots, potatoes, etc. Put the pan in the Microwave and build a fire with 8 to 10 lb. charcoal at first. As the fire goes down add some dry wood to it. The cooker will stay about 300 deg. and cook most meats in about 3 hours, Check it every half hour and flip the meat when you do.. You will have to add wood whenever it breaks up and makes coals.
What can you cook in it?
I've used mine to cook everything from turkeys to roast to fish to even baking a cake. One thing about the Cooker is that people will smell the wood burning , know you are cooking and find their way to your house. Always prepare (Lagnaippe) a little extra just in case this happens. Throw in a little cajun music and the food will always taste better. |
