Pancakes

tbsp of all purpose flour fat for skillet (1/4 "
deep)
salt and pepper to taste 2 eggs, well beaten
1/4 tsp baking powder 1 med-sz onion grated
6 med-sz potatoes grated (about 3 cups) 1 tbsp of minced
parsley (optional)
- Combine flour, salt,
pepper and baking powder. Set aside
- Wash, pare and finely grate potatoes. Set aside
- Heat fat in a heavy skillet over low heat
- Combine the flour mixture with eggs, onion and parsley
- Drain liquid that gathers from grated potatoes, add
potatoes to egg mixture and beat thoroughly with a spoon
- When fat is hot, spoon about 2 tbsp of batter for each
pancake into fat, leaving about 1" between pancakes.
Cook over med. heat until golden brown and crisp on one
side. Turn and brown other side. If you prefer larger
pancakes, make them bigger.
*Tastes great with fresh pork (pork bellies), reg. bacon
or pork chops. Enjoy.
