Pumpkin Bread

                   

3 cups flour

2 cups sugar

2 teaspoons baking soda

1½ teaspoons ground cinnamon

1 teaspoon ground nutmeg

½ teaspoon baking powder

½ teaspoon salt

¼ teaspoon ground cloves

2 eggs

2 cups pumpkin (1-16 ounce can)

2/3 cup oil

 

Stir together flour, sugar, soda, cinnamon, nutmeg, baking powder, salt and cloves in a large mixing bowl. Lightly beat eggs. Beat in pumpkin and oil; add to flour mixture, stirring just to combine. Spoon into 2 greased 8 –inch loaf pans. Batter will be stiff.

 

Bake at 350* for 55 to 60 minutes or until wooden pick inserted near center comes out clean. Cool 5 minutes; remove from pans. Cool completely and wrap.
