Peanut Butter Cookies

 

1¾ cups all purpose flour

¾ teaspoon baking soda

½ teaspoon salt

½ cup granulated sugar

½ cup light brown sugar packed

½ cup solid shortening

½ cup creamy peanut butter

1 large egg 

2 tablespoons milk

1 teaspoon vanilla extract

 

 

Mix flour, baking soda, and salt, set aside

 

Beat sugar, brown sugar, shortening, and peanut butter in a large bowl with electric mixer until blended. Beat in egg, milk, and vanilla. On low speed, gradually beat in flour mixture. Divide dough into three portions. Cover and chill 2 hours or until easy to roll.

 

Pre-Heat oven to 350*

 

Roll one portion of the dough at a time into a 1/8 -inch thick circle on a lightly floured surface. Cut with floured cutter. Place cookies on un-greased cookie sheet, 2 inches apart.

 

Bake 12 to 15 minutes until light brown and no longer puffy. Cool on wire racks. Decorate with colored frosting if desired.
