Muffins (Basic Recipe)

 

1¾ cup all purpose flour

1/3 cup granulated sugar

2 teaspoons baking powder

¼ teaspoon salt

1 large egg

¾ cup milk

¼ cup vegetable oil

¾ cup fruit (optional) fresh or frozen blueberries, cranberries etc.

 

Preheat oven to 400*                

Lightly grease muffin cups or line with paper liners; set aside.

 

In a medium sized mixing bowl stir together flour, sugar, baking powder, and salt. In a small mixing bowl combine egg, milk and oil; mix slightly. Add to flour mixture. Stir just till moistened (the batter will be lumpy). At this point you may add fruit if desired. Fill muffin cups 2/3 full. Bake; place muffin tin in oven.

 

Bake for about 20 minutes, or until golden brown, remove pan from oven; cool slightly on racks.
