Merry Muffins
¾
cup milk
½
cup vegetable oil
1
tablespoon grated orange peel, if desired
1
large egg
2
cups all purpose or whole wheat flour
½
cup granulated sugar
3
teaspoons baking powder
½
teaspoon salt
1
cup fresh or frozen cranberries, cut in half, or dried cranberries slightly
chopped
1/3
cup chopped nuts, if desired
Heat
oven to 400 *
Grease
bottom of 12 medium muffin cups, 2 ½ X 1 ¼
inches or place paper linings.
In
a large mixer bowl, mix milk, oil orange peel and egg . Stir in flour, sugar,
baking powder and salt all at once just until flour is moistened (batter will be
lumpy.) Fold in cranberries and nuts. Divide batter evenly among muffin cups.
Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to wire
rack.
