Meatloaf

2 large eggs

1½ pounds ground beef

½ pound bulk pork sausage, mild

1 (16-ounce) can tomato peeled whole, chopped and juice reserved

¾ cup saltine cracker fine crumbs (about 20 crackers)

½ cup onion, finely chopped

2 tablespoons parsley, chopped

1 teaspoon salt

1/8 teaspoon pepper

3 slices bacon cut in half crosswise

Preheat oven to 350*.

In a large mixing bowl, beat eggs with a fork. Add beef, sausage, tomatoes with reserved juice, cracker crumbs, onion, parsley, salt and pepper. Mix until well blended.  Press firmly into a 9x5x3-inch loaf pan. Run a thin knife around edge and invert meat loaf into a shallow baking dish (about 12x 2-inch). Arrange bacon pieces on top.

Bake for 1 hour. Spoon off fat drippings. Bake 30 minutes longer or until no longer pink in center. Drain off any additional drippings.

Cover loosely with foil and let stand for 10 minutes. Transfer to a serving platter.
