Macaroni Tuna Salad

 

¼ cup vegetable oil

3 tablespoons lemon juice fresh

2 teaspoons fresh chives, chopped or green onion tops

½ teaspoon salt

1/8 teaspoon pepper

¼ cup mayonnaise

1 cup elbow macaroni cooked and drained

1 (6½-ounce) can tuna drained and flaked

¼ cup celery chopped

¼ cup carrot grated

1 tomato small, thinly sliced

½ medium zucchini or cucumber, thinly sliced

 

Combine oil, lemon juice, chives or onion tops, salt, pepper, and mayonnaise; mix well.

 

In a medium bowl, combine macaroni, tuna, celery, and carrots; toss with lemon dressing and mound in the center of a medium-size platter. Garnish with slices of tomato and zucchini or cucumber around outer edge of platter. Chill before serving.
