2½
cups all purpose flour
½
teaspoon baking soda
½
teaspoon cream of tartar
¼
teaspoon salt
1cup
margarine, softened
¾
cup granulated sugar
½
cup powdered sugar
1
large egg
1½
teaspoons vanilla extract
In
a small mixing bowl, mix together flour, baking soda, cream of tartar and salt,
set aside.
In
a larger mixer bowl beat margarine, sugar, and powdered sugar with electric
mixer until blended. Beat in egg and vanilla. On low speed, gradually beat in
flour mixture until well blended. Divide dough into three portions. If too
sticky to roll, cover and chill up to 2 hours.
Preheat
oven to 350*
Roll
one portion of dough at a time to 1/8-inch thickness on a lightly floured
surface (keep remaining dough in the refrigerator). Cut with floured cutters.
Place 2 inches apart on un-greased baking sheets.
Bake
10 to 12 minutes until light brown and no longer puffy. Cool 1 minute on baking
sheets before transferring to cooling racks. When cool, decorate with colored
icing if desired. After icing sets, store loosely covered.
