Crumb Coffeecake

 

4 cups all purpose flour

1 teaspoon baking powder

2/3 cup solid shortening

½ teaspoon salt

2½ cups granulated sugar

2 large eggs, slightly beaten

1½ cups Buttermilk

1 teaspoon baking soda

1 cup light brown sugar

1 teaspoon ground cinnamon

 

Preheat oven to 350*

Grease and flour (3) 8-inch cake pans.

 

In a large bowl, blend together flour, baking powder, shortening, salt and sugar. Remove 1 cup of this mixture for future use; set aside. In a separate bowl, mix the eggs, buttermilk and baking soda together, and then add the remaining flour mixture, stirring thoroughly.  It will be slightly lumpy.  Add brown sugar, and cinnamon to the flour mixture that you had set aside. Pour the batter mixture into the prepared cake pans. Sprinkle topping equally on top of batter of all 3 pans.

 

Bake for 35 minutes or until a tooth pick inserted in center comes out clean.
