Cranberry Walnut Bread
2 cups all purpose flour
2/3 cup granulated sugar
2¼ teaspoons baking powder
¾ teaspoon salt
1 large egg
1 cup milk
3 tablespoons oil
1 teaspoon vanilla
extract
1 cup walnuts
1cup cranberries, chopped
Grease bottom only of 9-inch loaf pan
Pre-heat
oven to 350*
In a large bowl combine flour, sugar, baking
powder, and salt; mix well. Set aside.
In a small bowl combine egg, milk, oil and
vanilla, blend well. Gradually add milk mixture to flour mixture stirring just
until the dry ingredients are moistened. Fold in 1 cup walnuts and the chopped
cranberries then spoon into the prepared 9-inch loaf pan.
Bake for 1 hour, or until the center is set. Cool
in the pan for 10 minutes before turning onto wire rack to cool.
