Cranberry Orange Bread

 

4 cups all purpose  flour

1½ cups granulated sugar

3 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1½ cups orange juice concentrate

2 large eggs beaten

½ cup vegetable oil

2 teaspoons orange rind, grated

2 cups cranberries, chopped

1 cup nuts chopped

 

Preheat oven to 375*

Grease and flour two 9x5x3-inch loaf pans.

 

In a large bowl, stir flour, sugar, baking powder, baking soda and salt; set aside. In a medium bowl, mix orange juice, eggs, oil and orange rind until blended. Add to dry ingredients and stir just until moistened. Stir in cranberries and nuts. Pour into loaf pans.

 

Bake for 55 to 60 minutes or until a wooden pick inserted in center comes out clean. Remove from pans. Cool on wire racks.
