Cranberry Nut Bread

 

2 cups all purpose flour                  

¾ cup granulated sugar

¾ teaspoon salt                                   

1½ teaspoons baking powder

½ teaspoon baking soda          

1cup chopped cranberries        

½ cup chopped walnuts            

1 tablespoon orange zest           

1 large egg                           

2 tablespoons vegetable oil

¾ cup orange juice or water

 

Preheat oven to 350*

Grease 9-inch loaf pan

Combine flour, sugar, salt, baking powder, baking soda, cranberries and chopped nuts, stir to coat with flour. In a small mixing bowl add egg, oil, orange juice and grated orange peel, mix; add to flour mixture. Stir only until combined. Spoon batter into prepared pan.

Bake for 50 minutes or until a toothpick comes out clean. Let bread stand for about 10 minutes. Remove from pan, place on a cooling rack. Let cool completely before slicing.
