Classic French Dressing

 

¼ cup vegetable oil or olive oil

2 tablespoons tarragon or wine vinegar

½ teaspoon salt

1 small clove garlic, crushed

Generous dash of fresh ground pepper

 

For marinade:  Mix all ingredients. 

 

For dressing:  Toss salad greens (about 12 cups) with oil just until leaves glisten. Mix vinegar, salt, garlic, and pepper; toss with salad mixture.
