Cinnamon Walnut Muffins

 

1½ cups all purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon ground cinnamon

½ teaspoon salt

½ cup chopped walnuts

1 large egg  

½ cup milk

¼ cup vegetable oil

 

Pre-heat oven to 400*

 

Grease 9 muffin cups or use paper liners. Half fill the remaining muffin cups with water. 

 

In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well. Add walnuts. In a small bowl, add egg, milk and vegetable oil mix well; add to dry ingredients. Mix only until moistened. Fill muffin cups with batter 2/3 full. 

 

Bake for 20 to 25 minutes or until golden brown.
