Cherry Swirl Coffeecake

 

1½ cups granulated sugar

½ cup butter or margarine, softened

½ cup solid shortening

1½ teaspoon baking powder

1 teaspoon vanilla extract

1 teaspoon almond extract

4 large eggs

3 cups all purpose flour

1 can (21-ouonce) cherry pie filling

Powdered sugar glaze

 

Pre-heat oven to 350* 

Generously grease jellyroll pan; 15½ x 10½ x 1-inch. 

 

Beat sugar, butter, shortening, baking powder, vanilla, almond extract and eggs in large bowl with electric mixer on low speed, scraping bowl constantly, Beat on high speed 3 minutes, scraping bowl occasionally. Stir in flour. Spread two-thirds of the batter in pan. Spread pie filling over batter. Drop remaining batter by tablespoonfuls onto pie filling.

 

Bake about 45 minutes or until toothpick inserted in center comes out clean.

 

Drizzle powdered sugar glaze over warm coffee cake.

 

*Powdered Sugar Glaze

1 cup powdered sugar

1 to 2  tablespoons milk or water
