Cheese and Apple Coffeecake

 

1 cup shredded cheddar cheese (sharp)

½ cup granulated sugar

1 medium apple peeled, cored and chopped

2 teaspoons baking powder

½ teaspoon salt

½ cup milk       

1½ cups all purpose flour

2 tablespoons butter or margarine, melted

1 large egg slightly beaten

 

*Topping

1/3 cup all purpose flour     

1/3 cup firmly packed light brown sugar

½ teaspoon ground cinnamon              

3 tablespoons butter of margarine, melted

 

Heat oven to 375*

 

In a medium sized mixing bowl combine all coffeecake ingredients except cheese and apple. Beat at low speed, scraping bowl often, until well mixed (about 1 to 2 minutes) Stir in cheese and apple. Spread into a greased 9-inch square-baking pan. In a small bowl stir together topping ingredients; sprinkle over batter.

 

Bake for 25 to 35 minutes, or until a wooden toothpick inserted in center comes out clean.
