Apple
Streusel Cake
*Streusel
1 cup light brown sugar
1 cup chopped apples
1 cup chopped walnuts
(optional)
¼ cup all purpose flour
1 teaspoon ground cinnamon
3 tablespoons butter or
margarine, melted
*Cake
1cup all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ cup butter or margarine,
softened
3 large eggs
½ teaspoon vanilla
1/3 cup orange juice
*Glaze
½ cup powdered sugar
2½ teaspoons orange juice
Preheat oven to 350*
Grease a 9 or 10-inch tube pan.
*Streusel
In a medium bowl, combine brown
sugar, apples, nuts, flour, and cinnamon. Stir in melted butter. Set aside.
*Cake
In medium size bowl, combine flour, baking powder and baking soda; mix well; set aside. In a large bowl cream together butter and sugar until light and fluffy. Add eggs, one at a time mixing well after each addition. Add vanilla. Mix well. Add flour mixture and orange juice to egg mixture, mix well. Spoon half of the batter into tube pan. Sprinkle half of the streusel mixture. Spoon remaining batter over the streusel spreading to make an even layer. Swirl with knife to make a marble pattern.
Bake for 15
minutes. Remove cake; sprinkle with remaining toping. Return cake to oven; bake
about 30 to 35 minutes longer, or until a toothpick inserted in center comes out
clean. Transfer to wire rack to cool completely.
*Glaze
Combine powdered sugar and
orange juice. Mix well.
Drizzle glaze over cooled cake
