ELSA'S MUM'S SALAD

This was originally devoured by us at Elsa's, which is how the dish got its name. We've added other ingredients over the years, but the original kudos go to Elsa's mum

Cut up sweet potato into biggish chunks, coat with salt, and cook in oven for about 1/2 hour.

Fry mushrooms & some chopped up chicken (400 g or so?) in pan til cooked. Can fry these in garlic and chilli if you like.

Cook a packet of pasta, shells, penne, and the like is good, spagetti tends to be a bit messy.

In a bowl, place the pasta, mushrooms, chicken. Peel the tough cooked skin off the sweet potatoes and crumble the soft insides up. Put this in with the pasta. Also add at least 50 g of crumbled up fetta cheese & some rocket (or english spinich).

Mix it up in the bowl, and you've got a wonderful, colourful salad!
