| Ingredients: 1 medium bell pepper, diced 1 large onion, diced 1/4 cup fresh celantro leaves 1 14.5oz can diced tomatoes 2 - 3 6oz cans tomato sauce 1 tsp garlic powder 1/2 tsp italian seasoning 1 - 1 1/2 tsp cumino powder w tbsp margarine or butter mushrooms (if desired) 1 tbsp yellow mustard 2 tbsp picante sauce |
| Cooking Directions: In deep skillet melt margarine or butter and saute onion, bell pepper, mushrooms, and rice till rice is lightly browned. Add tomatoes, tomato sauce, spices, mustard, and picante sauce. Cover pan tightly with lid and simmer till rice is done; add water if and when necessary. |
