Luaki Juice :

take a tender bottle gourd, cut a small piece enough to make a glass of juice, store the rest of the bottle gourd in refrigerator for further use. now wash the small piece, peel it ,then chop into small pieces, put it in juicer make juice, strain it add salt or pepper,or chat masala to taste.

How to prepare suash ?

Wash and peel. Chop into small cubes, about 1/2". Steam until slightly soft, like yellow squash, usually about 15 minutes. Alternatively, place in frying pan or wok, with one teaspoon of ghee, and sauté on medium heat until slightly soft and moist. Melt one tablespoon of ghee in a large frying pan until it turns clear. Mix 1/2 teaspoon whole cumin and 1/2 teaspoon of turmeric into the ghee until the aromas are released. Add the steamed or cooked lauki and evenly coat it with the ghee-spice mixture. Serve immediately, not too hot.

Lauki (Latin Lagenaria siceraria) belongs to the curcubitaceae family and is also known as bottle gourd. These gourds contain moderate amounts of Vitamins C and B complex and a few proteins. Their high water content makes them cooling and lubricating.

From the ayurvedic perspective, lauki is extremely Pitta pacifying. It particularly pacifies Bhrajaka Pitta, the sub-dosha of Pitta that governs the skin, by pacifying Ranjaka Pitta, which governs the liver and blood. It provides balanced rehydration for persons with fire, air or space predominant physiology.

Lauki is blessed with a good amount of soma (lunar energy element) from Nature, which is extremely balancing for persons with a strong fire element and nurturing for Vata persons with space or air predominant physiology.

The bottle gourd generally has a very pale green smooth skin. The flesh is white. Size and thickness can vary widely. Choose young, firm lauki for best results. Scrape and discard harder portions of skin, and scoop out and discard seeds before cooking.

The bottle gourd is low in fat and cholesterol yet high in dietary fibre. It contains 96% water and 100gm of it contains around 12 Kcal. It is rich in iron and also has vitamins C and B complex. It has sodium of 1.8mg per 100gm and 87 mg of potassium making it suitable vegetable for hypertensive patients. It is excellent for light, low-cal diets, as well as for small children, people with digestive problems, diabetics and convalescents.

Cooling Effect
Its high water content makes it very cooling. The cooked Bottle Gourd is cooling, calming, diuretic and easy to digest. It is also effective against constipation and other digestive disorders.
