Zucchini Pancakes

Ingredients:

Pancakes

2 cups Bisquick

1 cup milk

2 eggs

2 cups shredded zucchini, drained

1/4 cup grated Parmesan cheese

18 slices tomato

1 cup shredded cheddar

1/2 cup sliced green onions

 

Directions: Beat Bisquick, milk, eggs until smooth. Stir in zucchini and Parmesan cheese. Pour 1/4 cup batter on greased griddle. Cook until dry around the edges, turn. Top with remaining ingredients and top with buttermilk dressing.

 

Buttermilk dressing:

3/4 cup mayonnaise

1/2 cup buttermilk( or 1 Tbsp lemon juice + milk to make 1/2 cup)

1 tsp parsley flakes

1/2 tsp minced onion

1 clove garlic

1 tsp salt

dash of ground pepper.

Directions: Mix all the above ingredients well and refrigerate at least 2 hours.
