Quick Cheese Danish

 

Roberto's favorite breakfast

Ingredients:

2 Pkgs. refrigerated biscuits ( or biscuits made with Bisquick, the recipe is on the back of the box)

Any kind of jam

powdered sugar( for garnish)

 

Filling:

1 cup cottage cheese

1 pkg. (3 oz) cream cheese

1 egg yolk

3 Tbsp sugar

1/2 tsp vanilla

 

Directions: Beat cottage cheese and cream cheese in medium bowl until cheese curd is partially broken; blend in the remaining ingredients; refrigerate. On lightly- floured board, using a rolling pin or hands, flatten each of the biscuits into a 3 inch circle. Push the center of the dough down a little and make a rim on the outer edge of the dough, by moistening the edge and pinching together at 3 or 4 points. In the center, put 1 Tbsp cheese filling .( the rim should keep the filling from running over the edges of the biscuit).

Bake on a greased cookie sheet for 15 minutes or until lightly browned. Remove to cooling racks. Spoon marmalade onto each cheese Danish. Garnish with sifted powdered sugar.
