Egg and Canadian Bacon Breakfast Dish

 

 

Ingredients:

 

1/4 cup chopped onion

1/2 cup butter or margarine

1/2 cup all purpose flour

4 cup milk

6 oz shredded Swiss cheese( 1 1/2 cups)

1 cup Canadian bacon

1/3 cup chopped canned pimiento

16 hard cooked eggs, quartered

1 1/2 cup soft breadcrumbs

3 Tbsp butter, melted

Toast points or English muffins

 

Directions: In saucepan cook onion in 1/2 cup butter until tender. Blend in the flour, 1/2 tsp salt and 1/8 tsp pepper. Add milk; cook and stir till bubbly. Add cheese, bacon and pimiento; stir until the cheese melts. Place half of the eggs in bottom of a 3 quart casserole dish. Spoon 1/2 of the sauce over it. Repeat the layers. Cover. Chill up to 24 hours. Toss crumbs with melted butter; wrap and chill.

Before serving bake casserole at 375F for about 45 minutes. Sprinkle with crumbs. Bake about 15 minutes more. Serve over toast or toasted muffins. Serves 16.
