Cranberry- Banana bread
Ingredients:
1/4 cup butter or margarine
1 cup of sugar
1 egg
2 cups sifted all purpose flour
3 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1 cup mashed ripe banana
1/4 cup milk
1 tsp shredded orange peel
1 1/2 cup fresh cranberries, ground and drained
1 cup chopped pecans
Directions: Cream the butter and the sugar; add egg, beat until creamy. Sift dry ingredients together, and mix the banana, milk and the orange peel. Add the flour ingredients and the banana mixture alternately. Stir in berries and nuts. Turn into greased 9x5x3 pan or 3 small loaf pans. Bake at 350F for 65 minutes for the 9 inch loaf , about half the time for the smaller loaves.
