Minnesota's fresh Blueberry Cream Cheese Pie

Ingredients:

Crust

1 1/3 cups all purpose flour

1/2 tsp salt

1/2 cup Crisco Shortening

3 Tbsp cold water.

Directions: Spoon flour into measuring cup, level. combine flour and salt in medium bowl. Cut in Crisco using pastry blender ( or 2 knives) until all flour is blended to pea-size chunks. Sprinkle with water, 1 Tbsp at a time. Toss lightly with fork until dough will form a ball. Press dough between hands to form a 5 to 6 inch " pancake". Flour the rolling pin and the surface lightly. Roll dough into circle. Trim 1 inch larger than upside- down pie plate. Loosen dough carefully. Fold dough into quarters. Unfold and press into pie plate. Fold edge under and flute.( the extra dough can be used to make 2-inch flowers with a cookie cutter. Cut 1/4 inch hole in the center of each. Place on ungreased baking sheet. Brush with milk. Sprinkle with sugar and bake for 7 to 9 minutes in 425F oven, cool completely).

Preheat oven to 425F. Prick the bottom of the piecrust about 50 times to prevent shrinkage. Bake for 10 to 15 minutes or until lightly browned.

 

Filling

3/4 cup plus 2 Tbsp sugar

2 Tbsp cornstarch

1/8 tsp salt

1 Tbsp lemon juice

3 cups fresh blueberries, divided

2 Tbsp butter or margarine

Directions: Combine the sugar( you can use less if you want), cornstarch and salt in medium saucepan. Add lemon juice and 1 1/2 cup blueberries. Cook and stir on medium heat, until mixture comes to a boil. Simmer, stirring often, until thickened. Remove from heat. Stir in butter. Cool to room temperature. Fold in remaining 1 1/2 cup blueberries.

 

Cheese Layer

3 oz cream cheese, softened

2 Tbsp sugar

1/4 cup dairy sour cream

1/2 tsp grated lemon peel

Directions: Combine cream cheese, 2Tbsp sugar, sour cream and lemon peel in small bowl. Beat at medium speed of electric mixer until smooth. Spread on bottom of baked pie crust. Spoon filling over cheese layer. Place one flower cutout in center of pie and remaining 6 cutouts around the edge of filling. Place 1 blueberry in center of each flower. Refrigerate.
