Baked Chicken, Mexican Style

Ingredients:

4 eggs

bottled green chili salsa or taco sauce

1/4 tsp salt

2 cups fine dry breadcrumbs

2 tsp each chili powder and ground cumin

1 1/2 tsp garlic salt

1/2 tsp ground oregano

3 large chicken breasts, deboned, split and skinned

about 1/4 cup butter

4 to 6 cups

 shredded lettuce

1 cup sour cream

 6 Tbsp green onions

 1to 1 1/2 dozen cherry or little Roma tomatoes

1 to 2 limes, cut in wedges

1 ripe avocado, peeled, pitted and sliced

Directions: In shallow pan beat eggs and salsa; combine all breadcrumbs and the spices. Dip chicken into egg mixture and than into  breadcrumb mixture. Spray pan with Pam; put chicken in pan, drizzle with butter. Bake at 350 for 20 to 30 minutes. Arrange lettuce on a platter, put baked chicken on top. Put a dollop of sour cream on top of chicken breast, sprinkle with green onions and tomatoes. Arrange lime wedges and avocado slices around , or on top of the chicken. ( This is a very colorful dish. Serve with fresh corn kernels and rice or noodles.)
