Apple Nut Cinnamon Muffins

Ingredients:

1 3/4 cup raisin bran cereal

1 3/4 cups all purpose flour

3/4 cup sugar

1 1/4 tsp baking soda

1/4 tsp salt

3/4 cup buttermilk( or milk + 1Tbs lemon juice to make 3/4 cup)

1/4 cup vegetable oil

1 large egg

1/2 cup peeled, finely chopped apple

1/2 cup chopped walnuts or pecans, 2 Tbsp melted butter

1/8 tsp cinnamon

 

Directions: Preheat oven to 400F. Grease 12 muffin cups. Mix first 5 ingredients in large bowl. Whisk buttermilk, oil and egg in small bowl. Add to dry ingredients and stir until just blended. Let stand 15 minutes

at room temperature.( batter can be prepared 2 days ahead; refrigerate. )Mix the other ingredients and add to the batter. Bake until centers are done , about 23 minutes. Cool muffins in cups on rack 3 minutes.( can be prepared 1 month ahead. Cool completely. Wrap each muffin in foil and freeze. Rewarm in 350F oven before serving. Serve muffins hot.( healthy breakfast treat)
