Zucchini and Summer Squash Medley


I created this recipe for my parents on July 27, 1995 and Mom insisted I write it down. She liked it :-) It goes well with the Salt Free Pasta Sauce. Like it, this side dish is salt free.

Ingredients

1 large onion,
cut in half lengthwise and sliced lengthwise
2 small summer squash, sliced
5 small zucchini, sliced 1 Teaspoon or less olive oil (optional)
1 Tablespoon lemon juice 1 Tablespoon dried cilantro leaves
1 to 1 1/4 small cans Hunt's salt free whole tomatos

Saute the onions in olive oil until transparent. Add summer squash zucchini, lemon juice, and cilantro leaves. Pour in the juice of one can of tomatos (use the juice of the other can in the pasta sauce recipe). Cut up and add the tomatoes of one can plus one tomato of the other can (the rest of the tomatoes of the second can should be used in the pasta recipe). Simmer until the squash are tender, but not limp and lifeless. Stir occasionally. Serve as a side dish to the pasta with Salt Free Pasta Sauce
