Kalua Pig (Oven Style)

  • 4 to 5 pound pork butt
  • 1 tablespoon liquid smoke
  • 11/2 tablespoons Hawaiian salt
  • ginger to taste
  • 1 large red onion, thin sliced

Preheat oven to 400 °F. Rub pork with liquid smoke, salt, and ginger. Cover meat with onion slices. Wrap pork in foil and seal completely. Wrap with wet paper towels (or banana leaves) and seal with another layer of foil. Place pork in roasting pan and bake for at least 5 hours, reducing heat to 250 °F after the first hour. After baking, shred pork, and season with additional Hawaiian salt if necessary. Makes 10 servings.
